Summer Peach Cobbler Made Simple

Ingredients
Peach Filling
- 5 to 6 peaches, peeled* and sliced (about 3 to 4 cups)
- 3/4 cup sugar
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1 to 2 teaspoons lemon juice
Batter
- 4 tablespoons butter (or butter substitute)
- 3/4 cup flour
- 3/4 cup sugar
- 1 1/2 teaspoons baking powder
- Pinch of salt
- 1/2 teaspoon vanilla extract
- 3/4 cup milk (can use almond or oat milk instead)
Directions
- Heat oven to 350°F.
- In a pot, mix peaches, sugar, cinnamon, salt, and lemon juice.
- Cook over medium heat until the mixture starts to bubble. Stir now and then.
- Lower the heat and let it simmer for 5 minutes. Remove from heat.
- Put butter in a baking dish and place it in the oven until melted.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In a small bowl, mix vanilla and milk.
- Pour the milk mixture into the flour mixture and stir until smooth.
- Pour the batter into the baking dish over the melted butter.
- Spoon the peach mixture evenly over the batter.
- Bake for 35 to 45 minutes, or until the top is golden brown and the peaches are bubbling.
- Cool to warm before serving.
Serving Tip
Serve alone or with a scoop of vanilla ice cream or whipped cream.
*Helpful Tip
To peel peaches more easily, cut a small “X” on each peach. Place them in boiling water for 1-2 minutes, then remove and cool. The skin should come off easily with a paring knife.
