Build-Your-Own Chicken Fajita Bowls

Kid Friendly!
Let everyone build their own chicken fajita bowl with rice, beans, and fresh toppings. A fun, family-friendly meal for busy nights.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice (about ½ to 1 lime)
  • 2 teaspoons taco or fajita seasoning (or homemade salt-free seasoning)
  • Pinch of salt and pepper, if needed
  • 1 pound boneless, skinless chicken breasts
  • 4 cups cooked brown rice or another grain
  • 1 can black beans, drained and rinsed

Optional toppings:

  • Chopped green onions
  • Chopped tomatoes
  • Diced cucumber
  • Shredded carrots
  • Diced peppers
  • Diced avocado
  • Scrambled eggs
  • 1 can corn, drained and rinsed, or 2 cups frozen corn, heated
  • Shredded cheese
  • Salsa

Directions

  1. In a large bowl, mix the olive oil, lime juice, and seasoning. Add the chicken and coat it well. Cover and refrigerate for 30 minutes.
  2. While the chicken marinates, prepare the toppings and place them in serving bowls.
  3. Cook the chicken on a grill or in an air fryer at 350°F until it reaches 165°F and is no longer pink inside, about 20 minutes. Cooking time may vary depending on thickness.
  4. Let the chicken cool for a few minutes, then slice it into strips.
  5. To serve, start with rice and black beans. Add chicken and any toppings you like. Enjoy!

Picky Eater Tip: Turn dinner into a fun food bar! Everyone can build a bowl with the foods they love and add new ones if they're feeling brave.
