Leftover Turkey Recipes
Many of us enjoy the leftovers of a Thanksgiving dinner as much as the meal itself.
Although there’s nothing like a turkey sandwich the day after Thanksgiving, check out these two creative ways to use up leftover turkey:

Ingredients |

Vegetable cooking spray |
|
1/3 cup slivered almonds toasted (optional) |
|
| |
3 cups cooked brown rice |
|
2 tsp soy sauce |
|
| |
1 (10 oz) pkg frozen green peas |
|
¼ tsp ground pepper |
|
| |
2 cups cooked turkey, cubed |
|
¼ tsp garlic powder |
|
| |
½ cup reduced fat mayonnaise |
|
¼ tsp dried tarragon leaves |
|

Preparation |

|
| |
Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. Combine all ingredients and put in baking dish. Cover and bake for 30 minutes. Serve hot. Yields 6 servings. |

Shredded Lettuce |

Carrot Sticks |

Preparation |
|
|
|
| |
Mix reduced-fat cream cheese with seasoning mix. Divide mixture into 4 portions and spread each portion onto 1 tortilla shell.
Divide turkey into 4 portions and place each portion onto 1 tortilla shell. Top with shredded lettuce and place carrot sticks in a single row down the middle.
Roll up and enjoy!
