Nutrition Leftover Turkey Recipes

Thanksgiving leftovers in the fridgeMany of us enjoy the leftovers of a Thanksgiving dinner as much as the meal itself.

Although there’s nothing like a turkey sandwich the day after Thanksgiving, check out these two creative ways to use up leftover turkey:

  Ingredients      
  Vegetable cooking spray   1/3 cup slivered almonds toasted (optional)  
  3 cups cooked brown rice   2 tsp soy sauce  
  1 (10 oz) pkg frozen green peas   ¼ tsp ground pepper  
  2 cups cooked turkey, cubed   ¼ tsp garlic powder  
  ½ cup reduced fat mayonnaise   ¼ tsp dried tarragon leaves   
         
  Preparation      
  Preheat oven to 350 degrees. Coat a large baking dish with cooking spray. Combine all ingredients and put in baking dish. Cover and bake for 30 minutes. Serve hot. Yields 6 servings.

MetroHealth Recipe Card: Turkey Wraps
         
  Ingredients      
  4 soft (flour) tortilla shells (look for low carb options)    
  ½ pound cooked turkey    
  1 (8-ounce) Reduced-Fat Cream Cheese    
  1 TBSP. Veggie or Ranch Seasoning Mix    
  Shredded Lettuce      
   Carrot Sticks      
         
  Preparation      
 

Mix reduced-fat cream cheese with seasoning mix. Divide mixture into 4 portions and spread each portion onto 1 tortilla shell.

Divide turkey into 4 portions and place each portion onto 1 tortilla shell. Top with shredded lettuce and place carrot sticks in a single row down the middle.
