Cream margarine and sugar at medium speed with an electric mixer until well blended. Add egg and lemon juice; beat well. Combine flour and baking soda and gradually add to creamed mixture, beating well. Shape dough into 26 balls and roll in remaining 2 tbsp. sugar. Place 2 inches apart on ungreased cookie sheets, and pat each portion into a 2-inch circle. Bake at 375 degrees for 9 minutes. Cool on wire rack. Makes 26 cookies.
